  1. Preheat the oven: Preheat your oven to 180°C (350°F). Grease and flour a 9x13-inch baking dish.
  2. Prepare the cake batter: In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Beat the egg yolks: In a large bowl, beat the egg yolks with 3⁄4 cup of sugar until the mixture is pale and fluffy. Stir in the milk and vanilla extract.
  4. Combine with dry ingredients: Gently fold the flour mixture into the egg yolk mixture until well combined.
  5. Beat the egg whites: In a separate bowl, beat the egg whites on high speed. Gradually add the remaining 1⁄4 cup sugar and beat until stiff peaks form.
  6. Fold in egg whites: Gently fold the egg whites into the cake batter, being careful not to deflate the mixture.
  7. Bake the cake: Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely in the dish.
  8. Prepare the milk mixture: In a bowl, whisk together the evaporated milk, sweetened condensed milk, and whole milk or heavy cream.
  9. Soak the cake: Once the cake has cooled, poke holes all over the surface using a fork. Slowly pour the milk mixture over the entire cake, allowing it to absorb completely. Refrigerate for at least 4 hours, or overnight for best results.
  10. Prepare the whipped cream topping: In a large bowl, beat the heavy whipping cream, sugar, and vanilla extract until stiff peaks form.
  11. Decorate the cake: Spread the whipped cream over the top of the cake. If desired, sprinkle ground cinnamon on top for garnish.
  12. Serve: Cut into squares and serve chilled. Enjoy your delicious Three Milk Cake!
